A Fruit Puree is a pulp and/or paste made from the
fleshy part of the fruit. The fruit is processed (heat treated, sieved,
etc.) to remove the skins and usually the seeds of the fruit and then
finished through screens to a specified consistency or smoothness.
- Also this pulpy solution usually contains the majority of the acid,
sugar and color contents of the fruit and it’s pulpiness will
depend on the screen sizes used in the finishing process.
- All s/s purees are pasteurized.
A Concentrated Fruit Puree is the single strength
(s/s) pulpy / sugar / acid / color solution which is depectinized and
finished to specific consistency, then evaporated to a Brix level, which
is folded to 2,3, or 4 times (x’s) the original fruit’s
single strength (s/s) Brix value.
Applications
- Bakery: cookie and pastry fillings; adds fruit
taste, texture and color.
- Beverage: juices, drinks, smoothies; adds fruit
taste, color and viscosity.
- Confections: jellies, gummies, hard candy centers,
chocolate centers.
- Dairy: yogurts, drinks, ice cream, sorbets, and
frozen novelties & desserts
- Snack Foods: breakfast, energy, and meal bars;
adds texture, nutrients, color and flavor.
- Sauces, Salad Dressings, Jams: offers texture,
color, flavor and fruit identity.
Product Characteristics
