Brix
This is the measurement by which the percentage by weight of soluble
solids (most of which are fruit solids) is expressed as a percent
of sucrose in a solution. This measurement at 20°C can be measure
wih a Brix hydrometer or more commonly wih a refractometer calibrated
to a Brix scale.
Dilution Ratio and Formula
This is defined as the amount of water added to a juice concentrate
or puree to convert the product back to its original S/S value. It
is usually expressed as the number of parts of water to one part of
concentrate or puree.
- Formula: The concentrate/puree "fruit solids"
value at stated Brix level divided by the fruit's S/S Brix level's
"fruit solids" value.
- Example: If Concord is desired at 16 Brix and
"fruit solids" per gallon of 1.419, then one part of concentrate
at 68 Brix and "fruit solids" per gallon of 7.568, calculates
to a dilution ratio of 5.33 total parts. This means 4.33 parts water
to one part concentrate.
Essence
This is defined as the volatile flavor fractions of the fruit that
are extracted during the first pass of the evaporation process making
a juice concentrate or concentrated puree. The strength or value of
this item is usually expressed in "fold" terms.
- 100 fold means 1 gallon of essence from 100 gallons
of S.S. fruit
- 150 fold means 1gallon of essence from 150 gallons
of S.S. fruit
- E/R means essence returned, our standard processing
procedure.
- E/S means essence separate, produced upon request.
